It is a sour fruit that resembles a little pumpkin and is roughly the size of a tomato. The fruit is then sun-dried, smoked, and salted and preserved. It is mainly used to add a smoky tart flavor to fish curries. It is known to decrease insulin levels along with reducing inflammation. It aids in the digestion process and helps protect against stomach ulcers. Pot tamarind contains a compound called Hydroxy Citric Acid (HCA) that may inhibit an enzyme that helps store fat in the body.
